Baked tomatoes stuffed with rice and herbs

Ingredients:

  • 6 large ripe tomatoes
  • 1 cup uncooked rice (white or brown)
  • 2 cups vegetable broth or water (for cooking rice)

  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped

Instructions:

1. Prepare the rice:
